Sous Vide Poached Eggs and Avocado Toast is a tasty breakfast that you can make using sous vide as a cooking technique. Let’s get straight to the recipe.
- 2 - 4 Eggs
- 2 slides of bread, toasted
- 1 Avocado, sliced or spread on bread
Preheat water bath to 167F
Gently lower your eggs into the water, ensuring not to crack. I use a pair of kitchen tongs.
Cook for 15 minutes.
Remove eggs and run them under cold tap water for 30 seconds or so to prevent them from overcooking.
Place avocado on toast and top with salt, pepper, and chives.
Gently crack an egg or two over your toast and enjoy!
